Asparagus Fritatta
Makes 4 servings
Ingredients
- 2 Tbsp Italian dressing
- 1 bunch asparagus spears, cut in ½-inch pieces
- 8 eggs (Omega-3, Eggland’s Best)
- ¼ cup milk
- 1 cup cheddar cheese, divided
Directions
- Heat the dressing in a large nonstick ovenproof skillet. Add asparagus & cook for 5 min., stirring occasionally.
- Beat together eggs, milk and ½ cup cheese in a medium bowl until well blended.
- Pour the egg mixture over the asparagus & stir gently.
- Bake at 350°F for 20 minutes or until set.
- Sprinkle with remaining ½ cup cheese after 20 minutes.
- Cook for another 5 minutes, or until the cheese is melted.
Cut into wedges to serve.
